There are many things our team are looking forward to as we continue our work on weight loss. Here are just a few: Buying clothes that don”t have an X in the size. Not asking for an “extension” for my seatbelt in a airplane. Being able to walk the whole Strawberry Festival without stopping every 20 minutes to rest. Clinbing stairs without getting winded. Keeping up on family walking outings. Being able to by the cute not fat clothes. Being healthier in all aspects. & not hiding behind others in the family photes. Fitting in those great rides at the parks and enjoying every minute of it.

“Home is where the health is. This is my kitchen last night. I made shredded beet salad and ate it with pasta-carrot-lima bean salad I had made on Sunday. The drink in the AM-PM Minimart cup is iced blue berry herbal tea, unsweet of course. A healthy kitchen not only needs the right food, and the right amount of elbow grease, it needs the right tools. That is why there are not only shots of my fridge and food, but also of the tools needed to make grated vegetable salads. With the right tools and ingredients, eating healthy at home is easy and fun. It also saves money.”

1. Everyone on the team will watch “The Biggest Loser Show” on Tuesday nights, doing a last-chance workout and then weighing in with the contestants. Then, we will text each other the number of pounds lost each week.

2. Each morning when we get to work, we will send an e-mail message to the other team members sharing our exercise activities since the previous day – type of exercise and number of minutes/miles/etc.

3. Three days per week, we will get together and walk up and down the stairs during lunch at work, and then have soup (or similar meal) together.

“Woodside Wonders gives you Chicken from Diane R. Crandall:  in this recipe, chicken thighs cook in a simple herb-infused tomato-and-wine sauce. The bone-in thighs give it plenty of hearty flavor, and since you cook them without the skin, it keeps the dish healthy. There’s plenty of sauce, so serve it over noodles or brown rice. Steamed broccoli or sautéed broccoli tossed with olive oil and a splash of lemon juice complete the meal.

10 servings | Active Time: 45 minutes | Total Time: 3 3/4-6 3/4 hours

  • 4 slices bacon
  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon fennel seeds
  • 1 teaspoon freshly ground pepper
  • 1 bayleaf
  • 1 cup dry white wine (see Tip)
  • 1 28-ounce can tomatoes, with juice, coarsely chopped
  • 1 teaspoon salt
  • 10 bone-in chicken thighs (about 3 3/4 pounds), skin removed, trimmed
  • 1/4 cup finely chopped fresh parsley

1. Cook bacon in a large skillet over medium heat until crisp, about 4 minutes.Transfer to paper towels to drain. Crumble when cool.
2. Drain off all but 2 tablespoons fat from the pan. Add onion and cook over medium heat, stirring, until softened, 3 to 6 minutes. Add garlic, thyme, fennel seeds, pepper and bay leaf and cook, stirring, for 1 minute. Add wine, bring toa boil and boil for 2 minutes, scraping up any browned bits. Add tomatoes and their juice and salt; stir well.
3. Place chicken thighs in a 4-quart (or larger) slow cooker. Sprinkle the bacon over the chicken. Pour the tomato mixture over the chicken. Cover and cook until the chicken is very tender, about 3 hours on High or 6 hours on Low. Remove the bayleaf. Serve sprinkled with parsley.
4. Variation:Turn 2 cups each of leftover chicken and sauce into Braised Chicken Gumbo. Heat1 tablespoon extra-virgin olive oil in a large saucepan over medium heat. Add 1diced medium red or green bell pepper and 2 tablespoons all-purpose flour and cook, stirring, until the pepper is beginning to soften and the flour is golden brown, about 2 minutes. Add 2 cups shredded chicken, 2 cups sauce, 2 cups reduced-sodium chicken broth, 1 cup sliced okra (fresh or frozen, thawed), 3/4cup instant brown rice (see Tip) and 1/8-1/4 teaspoon cayenne pepper. Bring to a boil. Reduce the heat and simmer until the flavors meld and the okra is tender, about 10 minutes.
Per serving : 260 Calories; 13 g Fat; 4 g Sat; 5 g Mono; 88 mg Cholesterol; 6 g Carbohydrates; 25 g Protein; 1 g Fiber;492 mg Sodium; 392 mg Potassium

Tips & Notes:
· Make Ahead Tip: Prepare Steps 1 & 2,cover and refrigerate bacon and sauce separately for up to 1 day. To finish,bring the sauce to a simmer and continue with Step 3. The cooked chicken and sauce can be refrigerated for up to 3 days. | Equipment: 4-quart or larger slow cooker
· Tip: If you want to use rice that is not“instant,” stir in 1 cup of any leftover cooked rice instead. Or,if you have time, add 1/2 cup of quicker-cooking whole-grain rice, such as Bhutanese red rice or Kalijira rice, and an additional 11/4 cups of chicken broth before adding the okra. Cook until the rice is almost tender, about 25minutes (or according to package instructions) then add the okra and simmer until it is tender.
· Tip: If you prefer, substitute 1 cup reduced-sodium chicken broth mixed with 1 tablespoon fresh lemon juice for the wine.

Also from Woodside Wonders:  baked chicken breast and baked taters.  Clean and cut up 4 large potatoes and three chicken breasts.  Place the chicken in a baking pan, and fill the taters in around the chicken.  Add 1 cup of chicken broth, and sprinkle will a little olive oil, season to taste and bake at 350 for 25-35 minutes.  Check to make sure not to overcook the chicken (leave the taters out and add a salad for less starch)”

Communication plans for our team: Team Woodside Wonders is keeping the lines of communication wide open as we press on to a thinner us. We are working through the phone, e-mail and giving those personal hugs and pats on the back when we are together as a group. Our current plans for improvement in communication are each of us taking a day or two and e-mail or text something encouraging to each of the other team members; making sure that each team member has the others phone numbers and encouraging each other to call if they are heading for a “food breakdown”. Our team knows that we are only as strong as our weakest link and keeping us in close communication and knowing that we support each other keeps that weak link strong.

This photo is one of our favorite swaps. Other healthy swaps we listed: smaller portions; single servings instead of eating until full, using 8″ plates instead of 10″, wheat bread instead of white, yogart with berries instead of ice cream, almond milk instead of regular milk, flavored water instead of soda, ground turkey instead of ground beef. One team member said her “food swap is switching from short bread cookies (one of my worst weaknesses) to the 100 calorie packs of the Lorna Doon cookies. Another said ” Everything Bagel Thin with Laughing Cow cheese (135 calories) vs. Everything bagel from Panera Bread with cream cheese (480 calories). Another team mate choose a healthy lunch eating out: her friends lunch 1,260 cal with 72 grams of fat, her choice 455 cal with 23 grams of fat. by looking up the nutrional content of foods at restaurants makes it easier to make healthier choices before going. We are Team Adios Adipose! Our SMART strategy includes low fat, low calorie and low carb diet plans. We’ve learned that one way we can save many calories is by skipping the mixers and trading our delicious margaritas for straight tequila shots (fun, fun!). Team activities include a daily 0900 team meetings at a local gym where all members are expected to be present unless already at work. We have …a strict “stairs only policy” and only park at the far end of the parking lots. For emotional and motivational support, as coworkers, we have easy access to monitor each other’s food choices, and are unafraid to use a fly swatter to smack away hands that are too tempted by unhealthy choices. Our friends and families have also been very supportive, joining us at the gym, encouraging healthy habits at home, and agreeing to ban doughnuts at work.

“Woodside Wonders” Our teams SMART wt. loss Strategy is this: “Our approach is simple: we are “in it to win it”, but what we want to win is healthy eating habits and healthy lifestyles! We try to keep in mind this is a lifestyle change and not a “dieting” challenge that we can go “off of” when we reach our goals. Our team is not dieting together, we are bonding together to learn to make better ch…oices when we eat. There are many choices out there for one to follow to lose weight, and we have each selected one that suits us…not everything works for every person. Fortunately, we all work together so we always have support within arm’s reach. It really is hard to make the wrong choices when you have someone helping make the right ones. some of us have a wicked sense of humor and can ususlly get minds off food with a good joke!
